Our Père Honneur Méthode Champenois Sparkling Wine from the Willamette Valley is our first ever sparkling release. This is a Willamette Valley take on what we love about classic champagnes: bright acidity, precise and crisp minerality, effervescent bubbles, and rich depth. This is from the Chehalem Mountains AVA and is 73% Pinot Noir and 27% Chardonnay. It was on tirage (meaning fermenting in the bottle) for over four years. We added minimal dosage of 5g/L, which classifies it as Extra Brut or very dry.

What stands out to me about this is the bright acidity and crisp minerality that gives way to richness. It has several nuanced layers of acid with Meyer lemon, umami with soy and nori, and richness with brioche and white chocolate.
